As the gelato spins in our Carpigiani machines, we pour in ribbons of our house-made stracciatella chocolate — 70% Cacao Barry chocolate blended with sunflower oil and cocoa butter. The chocolate hits the cold and breaks instantly into delicate shards, folding through the cream.
