Some of the best creations begin with a classic. For Koolfest 2026, Maestro Andrés has reimagined the traditional Italian affogato with exceptional Canadian ingredients and a subtle Colombian twist.
Mare a Mare starts with a scoop of our handcrafted Toasted Maple Walnut Gelato, made with Ontario walnuts and local Avalon Dairy milk and cream. It’s topped with a freshly pulled shot of espresso, whipped cream and a drizzle of house-made ají-infused Quebec maple syrup. The gentle warmth of Colombian ají perfectly balances the rich sweetness of the maple.
Served alongside is a mini cone featuring our new Uno Gelato × Mink Chocolates milk chocolate bonbon, handcrafted with our creamy Uganda Vanilla Gelato and a rosemary burnt caramel centre.
Inspired by Canada’s motto, A Mari Usque Ad Mare (“From Sea to Sea”), Mare a Mare celebrates Canada’s rich culinary landscape—one delicious spoonful at a time.
