Created in small batches here in Vancouver, our maestro, Andrés Bermudez, brings this composition to life with his delectable interpretation of Melody.
It begins with a saffron-infused base, made with fresh milk and cream from Avalon Dairy; delicate, lightly floral, naturally golden.
A ribbon of Sicilian pistachio cream follows, smooth and nutty, adding depth without heaviness.
Then a bright orange sauce lifts everything with a tangy touch of citrus.
Together, it’s not just a flavour, it’s a harmony. A balance of warmth, creaminess, and brightness that unfolds like music on the palate.
